SPAM rice crispy treats

I've discovered that when crisping SPAM diced cubes, they pop in the pan just like popcorn, signaling they're ready to be removed from the heat! It makes for a satisfying salty-sweet tennis snack. Plus, if you let the marshmallows sit out in the Texas sun on the tennis court, they become wonderfully gooey. Yum!

Ingredients

  • 1 can SPAM
  • 8 C rice crispy cereal
  • 8 oz tallow or butter
  • 10 oz mini marshmallows
  • Furikake

 Directions

 Grease 9x13 pan with cooking spray, set aside.

  1. Dice 3 – 4 SPAM slices into small pieces, use the rest to make musubi.
  2. Fry diced spam on med high heat until golden brown and crispy, it will jump in the pan as it crisps up, set aside on paper towel.
  3. Heat large pot on medium heat to melt tallow
  4. Reduce heat to low, add marshmallows and mix until combined
  5. Remove from heat, stir in rice crispy cereal, crispy spam, and furikake
  6. Press and rest in pan before cutting.
