Spicy Miso Chicken Wings

Miso, ginger, and garlic infuse these wings with a unique funkiness, making it worthwhile to let the marinade work its magic overnight for that full-flavored impact when they're smoked the following day.

 

 

Ingredients

  • 2/3 C white miso paste 
  • 1/4 C sake 
  • 3 T monk fruit brown sugar
  • 2 T rice vinegar 
  • 1/2 t sea salt
  • 1/2 t black pepper
  • 1/4 t cayenne pepper
  • 1/4 C minced garlic
  • 1/4 C minced ginger
  • 1 orange, juiced and zested
  • 1/2 C light soy 
  • 3/4 C dark soy sauce 
  • 2 T sesame oil 
  • 24 chicken wings 

Directions

  1. In a bowl, place the miso paste, sake, brown sugar, vinegar, salt, pepper and cayenne.
  2. Add the garlic, ginger, orange juice and zest, light soy sauce, dark soy sauce and sesame oil. Mix well and set aside
  3. Add wings to the bowl and marinate overnight.
  4. Set smoker to 400 F
  5. Dry the wings with paper towel and place on smoker about 35-45 minutes. The internal temperature should be 165 F and should be a beautiful golden brown.
