Brisket Hot & Fast

This was a dense brisket with barely 2 pounds of fat trimmed for tallow.  Was curious if I scored the fat like a pork belly if it would render faster.  The fat was just like butter, wrapped at 160 F internal temperature and finished at 206 F at 275 F about 8-9 hours.

I also like to use as much space on the smoker by using the top rack for an appetizer while the brisket is resting with Smoked Salsa / BBQ Smoke / Recipes | Cooking with Aloha, Texas Style (cooking-with-aloha-texas-style.com)
