Collard Greens & Ham Hocks

Best way to eat vegetables is with smoked meat, both are made low and slow!  Bonus, floor cleaner Makai our poi dog like the stems of collard greens, new dog treat.

Ingredients

  • 6 bunches of big leaf collard greens
    1-3 large meaty smoked ham hocks
    2 T monk fruit
    1 T tallow or other fat
    1 T smoked salt
    2 t Worcestershire sauce
    2 t apple cider vinegar
    1 tsp crushed red pepper flakes (crush with mortar and pestle to bring out more flavor, don't inhale) :-) 
    1 t garlic powder
    1 t paprika
    1 finely chopped onion
  • Directions
    1) Add ham hocks to a large pot and fill with water to cover the meat. Cover over medium high heat about an hour or until near tender.
    2) Tear greens away from the stem, hold by stem and pull down with other hand tearing leaf close to the stem works for me, I'm sure there's another technique.
    3) Layer stemless greens on each other, roll horizontally and cut to 1/2" pieces for nice strips.
    4) Add greens and add hot water to cover greens.
    5) Add remaining ingredients and cover 3 hours or until ham hocks are tender, with enough liquid covering the greens.
