KSP Lime Electrolyte Ginger Lemongrass Jello Shot

Lemongrass and ginger infused in ginger beer with a KSP tabs lime electrolyte is the perfect boost to keep hydrated in the Texas heat and keep the cramps from sneaking up on the tennis court.  I like the tartness and freshness that is supposed to be anti inflammatory and helps immune system.  I need all the help I can get! 

 

Ingredients

  • 16 oz ginger beer 
  • *Fresh ginger and lemongrass steeped with teabag 30 minutes before warming on stove for extra flavor (about 2 T each)
  • 1/2 C fresh lime juice
  • 2 envelopes (about 5½ teaspoons) unflavored gelatin 
  • 1 t monk fruit
  • KSP Electrolyte lemon lime flavor 
  • Cooking spray

Directions

  1. Lightly spray jello container for with cooking oil, wipe excess off.  I like silicone ice or candy molds
  2. In a small saucepan, combine the ginger beer, lime juice, monk fruit, minced ginger and lemongrass in a tea bag or cheesecloth.
  3. Sprinkle the gelatin over the surface of the liquid and let it sit for 5 minutes to bloom.
  4. Warm the mixture over medium-low heat for 2-3 minutes, stirring constantly until the gelatin is fully dissolved
  5. Add 1 KSP lime tablet and dissolve, a few minutes.
  6. Pour into prepared mold, I used a bread loaf pan.
  7. Refrigerate until set, about 4 hours
  8. Loosen sides to release, cut into cubes and set in shot cups.
