Moscow Mule Jello Shots

 

Moscow Mule Jello Shots offer a refreshing reward after a tennis match and are conveniently portable in a cooler. Using cupcake liners is a sanitary touch, especially when tennis hands are less than pristine.

Ingredients

  • 8½ ounces ginger beer 
  • 1½ ounces fresh lime juice
  • 2 envelopes (about 5½ teaspoons) unflavored gelatin
  • 6 ounces vodka of your choice
  • Cooking spray

Directions

  1. Lightly spray jello container for with cooking oil, wipe excess off.  I like silicone ice or candy molds
  2. In a small saucepan, combine the ginger beer and lime juice
  3. Sprinkle the gelatin over the surface of the liquid and let it sit for 5 minutes to bloom.
  4. Warm the mixture over medium-low heat for 1-2 minutes, stirring constantly until the gelatin is fully dissolved
  5. Remove from heat, add vodka
  6. Pour into prepared molds using a measuring cup with a pour spout for control
  7. Refrigerate until set, about 4 hours
  8. Loosen sides to release, serve in small cupcake liners.
