Ground Pork Sweet (Monk Fruit) Jerky

 

I was experimenting with a new hydrator and wanted to try making jerky with ground pork, so I did it halfway in the oven and finished in the dehydrator.  I like the texture of a soft jerky that is easy to bite, may add some peppers to spice it up next time and throw it in the smoker.

Ingredients

  • 1 lb. ground pork
  • 1/2 C monk fruit
  • 1 T mirin
  • 1 1/2 T shoyu
  • 2 T fish sauce
  • 1 t sesame oil
  • 1/2 t sea salt
  • 1/4 t Chinese 5 spice powder

 

Directions

  1. Bake 200 F for an hour and transfer to a dehydrator set at 160 F for another hour or so.
  2. Combine all ingredients in a bowl except the ground pork
  3. Add the ground pork and mix well
  4. Use a hand mixer on low speed to incorporate to a sticky consistency and rest overnight in the refrigerator
  5. Place the mixture on a plastic wrap lined surface and cover with another plastic wrap and roll as thin as possible
  6. Remove the top plastic and flip onto a silicone or parchment lined cookie sheet and remove the remaining plastic wrap.
  7. Bake for 1 hour and transfer to a dehydrator for another hour for soft/firm bite.  I cut the jerky into bite size pieces for easy snacking.
