Maybe not the technical definition of a quesadilla but this version works, not sure what else to call it. Fresh HEB Butter Tortillas, guacamole, chopped onions with pan fried brisket with a drizzle of hot chili crisp is the perfect blend of spicy heat with the smoky moist brisket.  Would have added cheese if I had it, but the guacamole adds enough creaminess.
