Shaking Beef

I had a hunter friend share moose meat with me.  It's such a lean meat and never cooked with it before, this is turned out to be a tender meat when cooked on high heat for a quick and easy dinner.  Makes a great rice bowl finished with green onions for color.

*Tri Tip is also yummy and a nice change up from smoking it.

Ingredients

  • 1 to 1 1/2 lbs. beef sirloin (cut into 1" cubes)
  • 2 T tallow or cooking oil
  • 2 T minced garlic
  • 1 T fish sauce 
  • 2 T oyster sauce 
  • 1 t Maggie Seasoning
  • 1 1/2 T monk fruit or sugar
  • 1 T chili sesame oil

Shaking Beef Dipping Sauce:

  • 1/4 C lime juiced
  • 1/2 t sea salt
  • 1/2 t cracked black pepper

Directions

  • Combine all the ingredients for Shaking Beef Sauce and Marinade with the beef. Marinate for 4 hrs.
  • Heat a wok, pan or skillet over high heat. Add the cooking oil and when it begins to smoke, add the beef cubes in one even layer and allow to sear for about 90 seconds to 2 minutes. Sear the opposite sides for about another 1-2 minute to brown all the sides. Shake and toss the wok while cooking. Turn the stove top fan on high to keep soke detectors from going off.
  • In a small ramekin, make the Shaking Beef Dipping Sauce by drizzling over the meat for a nice taste of freshness.
