Tri Tip - Perfect weeknight dinner  

 

Being able to throw a tri tip in the smoker for 45 minutes with minimal effort is so rewarding for a weeknight meal.  No fuss, just season, set the probe and unwind until the probe says it's dinner time.

 

Ingredients

  • Tri tip
  • Hardcore Carnivore Black 

 

Directions

  1. Set pellet smoker to 425 F. 
  2. Season with rub. I like the simple balance of seasonings in Jess Pryles' Black, nothing else is needed.
  3. Place on rack on a cookie sheet for easy handling and clean up.
  4. Set probe in thickest part of tri tip, set internal temperature to 135 F. 
  5. Takes about 45 minutes to reach IT and then 5 minutes to rest.
  6. Cut against the grain and serve.
