Electrolyte Ginger Lime Jello Shot

Texas summer tennis can be tough and thought a nonalcoholic healthy-ish quick refresher during changeovers by adding fresh ginger, limes and electrolytes to my cooler.  Plus, the KSP tablets are developed by an Austin urologist for kidney health with no sugar, just the good stuff, buy local y'all!  I've been fortunate to have this in my cooler a few years without experiencing any cramps, (thank goodness) and thought it makes the perfect tennis summer snack.

 

Ingredients

  • 16 oz ginger beer 
  • fresh ginger steeped with teabag 30 minutes before warming on stove for extra ginger flavor
  • 1/2 C fresh lime juice
  • 2 envelopes (about 5½ teaspoons) unflavored gelatin 
  • 1 t monk fruit
  • 1 KSP Electrolyte lemon lime flavor 
  • Cooking spray

Directions

  1. Lightly spray jello container for with cooking oil, wipe excess off.  I like silicone ice or candy molds
  2. In a small saucepan, combine the ginger beer and lime juice, remove fresh ginger if using.
  3. Sprinkle the gelatin over the surface of the liquid and let it sit for 5 minutes to bloom.
  4. Warm the mixture over medium-low heat for 1-2 minutes, stirring constantly until the gelatin is fully dissolved
  5. Add 1 KSP lime tablet.
  6. Pour into prepared molds using a measuring cup with a pour spout for control
  7. Refrigerate until set, about 4 hours
  8. Loosen sides to release, serve in small cupcake liners.
