Thai Coconut Red Curry with Smoked Pulled Pork

I'm always looking for new ways to enjoy smoked pulled pork rather than just over rice :-).  This adds a spicy savoriness from the red curry with the creaminess from the coconut milk and the freshness from the lime juice and cilantro.  I threw it in a crockpot for 7 hours and the flavors make the house smell wonderful when walking through the door.  It freezes well when life gets too busy to cook, too!  This is a great for meal prep that is satisfying and full of flavor.

 

Ingredients

  • 2 pounds leftover smoked pulled pork
  • 8 C pho beef broth
  • 2 cans coconut milk, unsweetened
  • 1/4 C red curry paste
  • 2 T fish sauce
  • 2 onions, coarsely chopped
  • 1/2 head of garlic, minced
  • 2 limes
  • cilantro bunch

 

Directions

  1. Add all ingredients into the crockpot EXCEPT the limes and cilantro
  2. Set to low setting for 7-8 hours
  3. Serve over rice and squeeze lime juice and cilantro for garnish.  I like extra lime!
