Thai Coconut Red Curry with Smoked Pulled Pork

I'm always looking for new ways to enjoy smoked pulled pork rather than just over rice :-). This adds a spicy savoriness from the red curry with the creaminess from the coconut milk and the freshness from the lime juice and cilantro. I threw it in a crockpot for 7 hours and the flavors make the house smell wonderful when walking through the door. It freezes well when life gets too busy to cook, too! This is a great for meal prep that is satisfying and full of flavor.
Ingredients
- 2 pounds leftover smoked pulled pork
- 8 C pho beef broth
- 2 cans coconut milk, unsweetened
- 1/4 C red curry paste
- 2 T fish sauce
- 2 onions, coarsely chopped
- 1/2 head of garlic, minced
- 2 limes
- cilantro bunch
Directions
- Add all ingredients into the crockpot EXCEPT the limes and cilantro
- Set to low setting for 7-8 hours
- Serve over rice and squeeze lime juice and cilantro for garnish. I like extra lime!
