Musubi with ground beef and Korean Pickled Cucumber

I like using leftovers in musubi when possible, it's a nice change up from my go to Spam Musubi :-).

Ingredients

Directions

  1. Use plastic wrap to line the musubi mold.
  2. Place fresh cooked rice in musubi mold and press.
  3. Add ground beef. 
  4. Remove liquid from cucumber by squeezing on a towel or it will get messy.
  5. Add rice to cover filling and firmly press the mold.
  6. Release from the mold and wrap with nori if preferred.
  7. Wrap each musubi while warm with plastic wrap.
