Pulled Pork Leftovers - Tacos with Soy, Sriracha, Lime Dressing
The sriracha adds a nice kick to Tuesday Tacos with the fresh napa cabbage, daikon and carrots
Ingredients
- 2 limes, juiced
- 1/4 cup soy sauce
- 2 T mirin
- 2 T Sriracha
- 2 T olive oil
- corn tortillas
- 1 C carrot julienned
- 1 C daikon julienned
- 3 C napa cabbage shredded
- leftover pulled pork
- cilantro 1 bunch chopped
- 1 bunch green onions chopped
Directions
- Soy Lime Dressing - In a small bowl, whisk together the lime juice, soy sauce, mirin and sriracha. Slowly whisk in the olive oil. Place the dressing in the fridge until ready to use.
- Slaw - julienne daikon, cabbage and carrots in a bowl, set aside.
- Heat a skillet to warm the leftover pork and warm the tortillas in the same pan.
- Assemble taco with all ingredients. The vegetables/slaw can be tossed in a small bowl with the lime dressing or lightly drizzled.
- If you run out of tortillas, this also turns into a salad the next day, add slivered almonds for added crunch.
