Smoked Salsa

Smoking salsa brings added flavor to chips and dips, tacos or scrambled eggs.  This is easy to add on when something is already in the smoker, I want to use all the real estate as I can.

Ingredients

8 Roma tomatoes

  • 2 – 3 Jalapenos halved with seeds, depending on size
  • 1 Garlic head (2 for extra garlic flavor)
  • 1 small red onion chunked
  •  4 limes
  • 1 T Rock salt
  • 1 bunch chopped cilantro
  • 1 bunch green onions, chopped

Directions

  1. Preheat smoker to 225
  2. Chop the Roma’s, peppers, limes and onions in chunks
  3. Peel garlic cloves.
  4. Place all those veggies into a cookie sheet or pan, and place in smoker 1/1/2 to 2 hours.
  5. Remove from smoker and let cool until the veggies come to room temperature.
  6. Once cooled place veggies into a food processor
  7. Add the tablespoon of salt, and the rough chopped cilantro.
  8. Pulse mixture until the consistency is to your liking. I did mine chunky, just a few pulses are perfect.
  9. Enjoy. I use it on scrambled eggs, on tacos, quesadillas, in addition to tortilla chips.
