Thai Basil Cilantro Green Onion (Ground) Beef Rolls

Had 2 pounds of frozen ground beef I didn't label and discovered what it was when it defrosted, oops.  This is simple and fresh meal with the Thai basil, cilantro and green onions.  For added spicy heat, drizzle chili garlic crunch over the top or as a dip.  I freeze ginger and garlic in ice cubes for dishes like these to add extra flavor.

Ingredients

  • 2 pounds ground beef
  • 1 T black pepper
  • 2 T minced garlic
  • 2 T fresh grated ginger
  • 3 t Chinese 5 spice
  • 1/3 C shoyu
  • 1/4 C Sweet Thai chili sauce 
  • 1/4 C chopped green onions, plus more for garnish
  • 2 C cilantro, chopped
  • 1/2 C Thai basil, chopped
  • 8 to 10 flour tortillas

Directions

  1. In a large skillet, cook the ground beef seasoned with black pepper over medium heat, breaking it apart as it browns, about 5 minutes. Drain fat.
  2. Add garlic, ginger, and Chinese 5 spice, cooking for an additional minute.
  3. Stir in shoyu and Thai chili sauce, simmering until the sauce thickly coats the beef, about 3-5 minutes.
  4. Mix in 2 T green onions and remove from heat.
  5. Warm tortilla in a pan. Spoon beef mixture on tortilla, top with cilantro, basil, additional green onions. Roll the tortillas like a  tight sushi roll to keep the filling in.  I need work on rolling lol.
  6. Place seam side down in pan on medium heat, about 2 minutes, until crispy and repeat on the other side.
  7. Serve the beef rolls warm with chili crisp oil for more heat, it’s also good without it.
