Shoyu Hard Boiled Eggs
With the recent shortage of eggs at the end of 2024, I understand it takes about 20 weeks for chickens to be able to produce eggs, so hope to make this last. It makes a filling snack and maybe egg salad?
Ingredients
- 7 eggs
- 1 C water
- 1/2 C shoyu
- 3 T rice vinegar
- 3 T mirin
- 1 T fresh ginger
- 1 T fresh garlic
Directions
- Boil eggs to preference hard 10 minutes or soft jammy 6 minutes
- Immediately transfer to ice cold water to stop cooking
- In pot combine remaining ingredients, bring to a boil and lower heat to simmer 5 minutes and cool 30 minutes
- Add eggs to cooled sauce and refrigerate several hours.
Next time I will add sesame oil, green onions and chili pepper flakes for extra flavor when eggs are more available :-).
