Lemongrass Boneless Pork Ribs

When Pork is $5 off @ Costco, it's worth trying a new recipe with fish sauce, lemongrass and garlic. I'm happy when pantry items turn out yummy with lots of leftovers.  It's pretty hard to mess up a smoked meat, at least it's easy to fix if needed with rice and kimchi to cut the fish sauce. 

 

I have seen this type of recipe for Vietnamese spareribs done in an oven, but there is something about the smoke flavor...

 

Ingredients

  • 8 pounds pork shoulder/butt, cut into 2" strips (like char siu)
  • 3/4 C fish sauce  
  • 1 C fresh or frozen lemongrass minced
  • 1/2 C minced garlic
  • 4 t monk fruit

 

Directions

  1. Combine all ingredients together in large bowl.  Marinate in refrigerator overnight.
  2. Set smoker to 250-275 F for 2-3 hours, depending on how thick the meat is sliced.
  3. Enjoy with rice and pickled vegetable.
