Brussel Sprouts Roasted

Great way to eat vegetables roasted with bacon!  It's good without bacon, but bacon makes it better.

 

Ingredients

  • 4 lbs. Brussel sprouts 
  • 1/2 C olive oil
  • 2.25 t sea salt
  • 1.5 t black pepper
  • 3/4 C balsamic vinegar
  • 2 T honey
  • Bacon Jam (optional, highly recommend)

Instructions 

  1. Preheat oven to 425°F.
  2. Line a rimmed baking sheet with aluminum foil or use a Silpat silicone baking mat.
  3. Trim off the outer, dry leaves, cut the bottom off and slice sprouts lengthwise.
  4. In a large bowl, toss brussels sprouts with olive oil, kosher salt and freshly cracked black pepper to coat thoroughly.
  5. Transfer veggies to prepared baking sheet and roast until tender and caramelized, about 20 minutes. Turing half way.
  6. Place roasted brussel sprouts back in bowl. Add balsamic vinegar and honey and toss to coat evenly.
