Box mix cupcakes for quick homemade treats
Nothing wrong with box mixes, especially when it's being made to share with loved one and the satisfaction of being creative with a little help, we all need a little help.
I keep a box of cake mix on hand and add 4 eggs, 1 C buttermilk (replace the water) and whatever oil is directed, use an ice cream scoop into cupcake holders and bake about 17 minutes, in 350 F oven, use a toothpick to confirm doneness.
Microwave premade frosting in a cereal bowl in 15 second increments medium softness, not too thin, to dip the cupcake in for a smooth top.
